Glad to have you back making videos! I was playing through TBC Classic during the downtime between TWW and Midnight (I'm primarily a Retail player), and it's so cool seeing things I recognize from the post-Cata game as someone who actually started in Cata and never leveled in the original world before. I also like finding interesting structures I DON'T recall seeing and then going to the same spot in Retail to see if it's actually still there or not. Or looking up an NPC and seeing if they were one of the Rares/quest NPCs that were canonically killed during Classic or not if they somehow survived to torment the area a bit longer. Like the gnoll you mentioned here, though I also know that they went back and added a bunch of old world Rares and updated the loot pools for some old cosmetics on existing Rares at some point in either BfA or Dragonflight which is kinda neat, so maybe he was one of the Rares that got added back in more recently. Though now that I think about it, you mentioned a spider that got "added" in BfA, maybe that was actually one that got re-added too?
