here is curry ball ingredients and steps
Ingredients:
For the Curry Filling:
Potatoes (2 medium, boiled and mashed)
Chickpeas (1 cup, cooked or canned, mashed lightly)

Ginger (1-inch piece, grated)
Green chili (optional, finely chopped for heat)
Curry powder (1-2 tbsp)
Ground cumin (1 tsp)
Ground coriander (1 tsp)
Turmeric powder (1/2 tsp)
Garam masala (1/2 tsp)
Fresh cilantro (a handful, chopped)
Salt (to taste)
Lemon juice (1 tbsp)
Oil (for frying or sautéing)
For the Coating:
Bread crumbs (1 cup) or Rice flour (for gluten-free option)
All-purpose flour (1/4 cup, to make a slurry for binding)
Water (for slurry)
Optional Add-ins:
Peas (1/2 cup, cooked)
Carrot (grated, 1/4 cup)
Cashews or raisins (for a sweet crunch, optional)
Instructions:
Prepare the Filling:
Heat some oil in a pan, and sauté the onions until golden. Add garlic, ginger, and green chili, and cook for 1-2 minutes.
Stir in the spices (curry powder, cumin, coriander, turmeric, garam masala), and cook for another 1-2 minutes to release the aromas.
Add the mashed potatoes and chickpeas, and mix everything together. Add peas, carrots, or any optional ingredients here if you like.
Season with salt and add lemon juice. Let the mixture cool down.
Shape the Balls:
Once the filling is cool, shape it into small, round balls (about the size of a golf ball).
Coat the Balls:
In a small bowl, make a slurry with the all-purpose flour and water (it should be a smooth, thick batter).
Roll each ball in the flour slurry, then coat it with breadcrumbs (or rice flour for a gluten-free version).
Fry or Bake:
Heat oil in a frying pan (about 1-2 inches deep) and fry the balls in batches until they’re golden brown and crispy. Alternatively, you can bake them at 375°F (190°C) for about 20 minutes, flipping halfway through.
Serve:
Serve hot with dipping sauces like tamarind chutney, yogurt sauce, or a spicy ketchup
